Cinnamon Butter Cookies

These will stand in for holiday cookies any time you need them. Rich and buttery with few carbs, these are easy to whip up on a moment’s notice.

Ingredients:

  • 2 cups almond flour
  • 1/2 cup grass-fed butter, room temperature
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp liquid stevia, or sweetener of choice, to taste
  • Pinch sea salt

Instructions

Directions:

  1. Preheat oven to 300°F.

  2. Add everything to a bowl and mix well.

  3. Spoon 14 heaping tablespoons onto a nonstick baking sheet. Press tops to form round circles (batter will spread a bit, so give yourself room).

  4. Bake 20 minutes
