Zucchini-Cashew Soup
We absolutely LOVE this soup. It’s creamy. It’s delicious. It’s super simple and easy to make. And it is amazing hot or cold. It also happens to be good for you.
Ingredients
- 4 large zucchini, sliced and steamed
- 1 cup raw cashews
- Bragg Liquid Aminos to taste
- Bragg Organic Sprinkle (or your favorite herbal seasoning) to taste
Instructions
Directions
Soak cashews in enough water to cover for 1 hour; drain.
Combine cashews, zucchini, aminos, and seasonings in blender and mix until smooth. You may add water or bone broth as needed for desired consistency.
Serve.
To reheat your soup, pour into saucepan, and reheat gently, but do not boil. It may also be served cold.
